Blueberry Mojitos with Lavender Syrup

Happy thirsty Thursday! I want I’m in school business it that. And not in an exceedingly great way. Is it still known as that? Am I in Associate in Nursing ever-spinning early 2000’s time machine? My spotify tells me affirmative. therefore do my dance moves.

Blueberry Mojitos with Lavender Syrup

Sooo. The lavender. I even have to inform you one thing funny. However not funny. However funny to me.

I decided to create these blueberry mojitos to travel with our dinner (which happened to be Associate in Nursing amazing one-pot chicken and rice dish!) – or ought to I say, as a touch cocktail before dinner. Soap was fiddling with a chunk of paper that he had been coloring with earlier, and he was enjoying therefore quietly and nicely, intently even. I went concerning my merry manner and visited grab the lavender I had leftover from the sweetener on the table to garnish the drink, and… it absolutely was gone.

I found my very little bug sitting on the ground pull off each.single.lavender flower. Like each single one. Like he was sitting {in a|during a|in Associate in Nursing exceedingly|in a very} pile of teeeeeny purple leaves and smelled sort of a combine between an wife and a heavily overdosed bathtub and body works store.

And he was therefore proud. Super proud. So happy. He researched at me with these massive eyes that were all “look what I did!” And a large bum grin.

I had tossed many lavender flowers from my pitiful garden into my sweetener many hours earlier, saving 3 sprigs for the garnish of those drinks. Whomp whomp. No will do currently.

So I ran outside and located these alternative very little purple flowers that grow from a perennial pteridophyte factor we've got outside. Last year I had mistaken them from lavender from many feet away, not noticing that it wasn’t *exactly* lavender till I used to be up shut. patterned it absolutely was shut enough, therefore we tend to may have slightly of purple in our cocktail. WINNING.

Max on the opposite hand has smelled of contemporary flowers ever since.

Blueberry Mojitos with Lavender Syrup

  • 1/2 cup fresh blueberries
  • 2 1/2 ounces of lavender simple syrup, recipe below
  • 1 1/2 ounce of white rum
  • 1 1/2 ounces of club soda
  • a handful of fresh mint leaves
  • the juice of one lime

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 teaspoons dried culinary lavender
  • 2 sprigs fresh lavender

  1. Place the blueberries in a small saucepan with 1 tablespoon of water. Heat over medium-low heat until the berries burst and become liquidy. Transfer the mixture to a blender or food processor and blend until pureed and smooth. You can strain this mixture through a fine mesh sieve if desired, but I don’t mind any little flecks of blueberry.
  2. Add 2 tablespoons of the blueberry puree in the bottom of the glass. Add the lavender syrup and stir. Add the fresh mint leaves and muddle them in the bottom of the glass. Add ice to the glass, and pour rum, soda and lime juice. Mix with a long spoon or knife and serve with an additional sprig of mint.
  1. Place the sugar, water and lavender in a saucepan over medium-low heat. Whisk until the sugar dissolves, bringing the mixture to a simmer. Cook for 1 minute. Turn off the heat and set the saucepan aside. Let it cool completely. Strain the mixture through a fine mesh sieve to remove the lavender. Store in a sealed container in the fridge!
